Making these delicious crumbly cornflakes is simple and doesn’t take much time. Make caramel sauce, pour it over cornflakes, stir, then bake! The hardest part is waiting for it to cool!

  1. Preparation: Preheat oven to 300 degrees Fahrenheit, line a baking sheet with parchment paper, and set aside. Add the butter, sugar, and corn syrup to a medium saucepan and cook over medium heat until the sugar and butter are completely melted.
  2. Burning: Stir until the mixture boils. Reduce heat to low and cook for 2 minutes. After 2 minutes, remove the pan from the heat.
  3. Combine: Add the cornflakes to a large heatproof bowl, then pour the sugar mixture over them. Immediately stir the cornflakes until evenly coated.
  4. Baking: Pour the cornflake mixture into a lined baking dish, then bake for 30 minutes. Remove from the oven and leave to cool completely.
  5. Drizzling: Once cool, melt the chocolate slowly in the microwave at 50% power within 30 seconds, stirring all the time. Once completely melted, sprinkle the chocolate over the cooled brittles. Let the chocolate harden completely before cutting into pieces to serve.

How to Store Leftover Cracked Cornflakes

If you’re lucky enough to have leftovers of this addictive snack, here’s the right way to store them. May I suggest making 2 batches? One for your family and one for you to hide from your family!

  • Table: Store in an airtight container in a cool, dark place for up to 6 weeks. Avoid storing them in the refrigerator, as they tend to weep and become soft if stored there.
  • Freezer: You can freeze cracked cornflakes for up to 3 months. Allow to cool completely before placing in an airtight container and freezing. Let thaw at room temperature for about an hour before serving.
